2 tablespoons olive oil
1 onion finely diced
1 tablespoon grated ginger
1 tablespoon ground cumin
2 carrots, grated
1 cup red lentils
1 litre stock (or water)
1 red onion, sliced
½ cup of chopped coriander (roots, stems and leaves)
Method
- Heat one tablespoon of oil in a large saucepan and add the onion, ginger and cumin. Cook over a medium heat until the onion is soft and transparent. Add the carrot, lentils and stock Bring soup to the boil, then reduce to a simmer and cook for 30 minutes, or until the lentils have disintegrated.
- Heat the remaining oil in a fry pan and add the red onion. Add the finely chopped roots and stems of the coriander to the onion and cook over medium heat until the onion has caramelized.
- Add to the soup when serving and top with the remaining coriander leaves.
