Red Lentil Soup

Ingredients

2 tablespoons olive oil
1 onion finely diced
1 tablespoon grated ginger
1 tablespoon ground cumin
2 carrots, grated
1 cup red lentils
1 litre stock (or water)
1 red onion, sliced
½ cup of chopped coriander (roots, stems and leaves)

Method
  1. Heat one tablespoon of oil in a large saucepan and add the onion, ginger and cumin. Cook over a medium heat until the onion is soft and transparent. Add the carrot, lentils and stock Bring soup to the boil, then reduce to a simmer and cook for 30 minutes, or until the lentils have disintegrated.
  2. Heat the remaining oil in a fry pan and add the red onion. Add the finely chopped roots and stems of the coriander to the onion and cook over medium heat until the onion has caramelized.
  3. Add to the soup when serving and top with the remaining coriander leaves.
