Breakfast Beans

If you are sick of eggs and need a high protein breakfast, try some homemade baked beans – too delicious for words.

Ingredients

400g white beans, soaked overnight
Olive oil
2 medium brown onions, finely chopped
2 garlic cloves, finely chopped
2 tbsp tomato paste
300ml red wine
800g tin tomatoes
3 tbsp brown sugar

Method

  1. Preheat oven to 180°C. Drain beans and place in a large saucepan. Cover well with cold water and bring to the boil. Simmer until cooked, about 30 minutes.
  2. Heat a little oil in saucepan. Add onion and garlic and cook gently until soft. Add tomato paste and cook for two minutes. Add wine and reduce by two-thirds. Add tomatoes, sugar and beans. Bring to the boil, cover with a lid and bake for one hour, stirring occasionally. Serve with 1 slice grain toast for a filling, protein rich breakfast.
